Speeches such as that of Najat Kanaache, international face of Moroccan cuisine, who will talk about the \u2018New Andalusian cuisine\u2019, or that of Carme Ruscadella, so far the most awarded woman in Spanish cuisine, who will speak with her son, chef Ra\u00fcl Balam, about their upcoming collaboration in the new concept of the restaurant Sant Pau. Sierra Leonean chef Fatmata Binta, winner of The Best Chef Awards 2021, will present her work on the dissemination of fonio, a drought-resistant cereal traditionally used in the Fulani culture, to which she belongs, and which can provide a sustainable alternative to other staple crops. \u00abThe concern for sustainability, identity, authenticity, concern for the territory and local products are concepts that are now indisputable in world gastronomy and that women were pioneers in valuing and defending, and \u2018F\u00e9minas\u2019 tries to give visibility and follow these voices as inspirers of new paths,\u00bb explains Benjam\u00edn Lana, head of Vocento Gastronom\u00eda.<br>In this sense, Chelo G\u00e1mez will talk about the \u2018Challenge of internationalization from local production\u2019, in a <strong>round table shared with Meritxell Juv\u00e9, CEO of Juv\u00e9&amp;Camps, and Rosa Va\u00f1\u00f3, commercial director of Castillo de Canena, which will be moderated by Esperanza Pel\u00e1ez.<\/strong>, coordinator of Malaga at the Table.
