Black Bridle:
Acorn 100% Acorn-fed Ibérico

The ASICI Black Bridle is the highest official certification that embodies the highest quality in an Iberian product. - It is regulated by the demanding Ibérico Quality Standard Royal Decree 4/2014.

It is only awarded to hams and shoulders that come from purebred Iberian pigs, rigorously selected, 100% Iberian, whose fathers and mothers are of the 100% Iberian breed and are registered in the Genealogical Book of the Iberian Pig Breed.

In addition, the Brida Negra guarantees that during the months of fattening, the animals have been raised in freedom in a pasture and have been fed exclusively on acorns, grass and the natural resources of the countryside.

Less than 1% of all hams cured in Spain achieve the Black Bridle.

The result is hams and shoulders of the purest flavor, rich in oleic acid and with an exceptional intramuscular fat infiltration, which gives them a unique juiciness, texture and aromas.

Dehesa Monteros limits its production to 1,000 specimens, a quantity that allows the monitoring of each individual animal during all stages of its life and the curing of its products. At the same time, we are able to maintain a high level of control over all the artisanal and traditional production systems, thus ensuring the homogeneity of the quality of our products.

For this reason, this Second Bridle offers detailed information on the pig's breeding farm, data on the animal's montanera, the identity of its parents (father and mother), and offers precise details such as its average cereal, chestnut and acorn consumption, the day of slaughter, the animal's weight, its oleic acid analysis, the date of entry into salt...
