In 2004 he acquired a farm in the Genal Valley where the abundance of acorns offered the possibility of raising Iberian pigs. In Serranía de Ronda there was already a long-standing tradition of Iberian pig breeding, but the complications of geography and its complicated profitability meant that it had almost been abandoned.
Chelo had the dream of achieving the best Iberian ham by taking advantage of all the peculiarities of the Serranía de Ronda. Thus, he gathered all the wisdom accumulated by tradition, with his technical-mathematical spirit and added the latest advances and scientific knowledge in the world of Iberian pig breeding.
