Our pastures are rich in chestnut trees. And it is a happy circumstance that the chestnut is a fruit that comes a month before the acorn. Thus, our 100% Iberian pigs naturally carry out a kind of «premontanera» based on chestnuts for about a month, just before the inexcusable "montanera" of acorns. During 40 days, our 1,000 Iberian pigs consume up to 80,000 kg. of chestnuts.
The chestnut is a fruit that adds to the body of pigs more fat with high oleic content. -
And as the Iberian pig is one of the animals with the greatest capacity to transfer the peculiarities of its food to the flavor of its meat, the chestnut premontanera adds a special sweetness and different and extraordinary nuances to our Iberian pork, providing organoleptic balance, softening the astringency and giving them a more lasting, elegant and deep flavor in the mouth.
