Montanera 3 acorns
Location - Montanera 3 acorns.
The montanera is the period prior to the slaughter of 100% Iberian pigs, during which they must feed exclusively on acorns.
In our Serranía de Ronda farms we have an almost perfect mix of 3 acorns. -
Holm oak, gall oak and cork oak.
These three types of acorns follow one after the other and are intertwined during the montanera season, with one or the other predominating depending on the time of the month, but always guaranteeing stability in the quantity of acorns throughout the entire period of the montanera and, as a result, maximum quality.
In addition, this mixture of different acorns gives Iberian pork an exceptional strength and flavor.
