- I am Chelo Gámez and I am 72 years old, we are in one of the farms that I exploit in my company, specifically in the farm La Algaba de Ronda, I am an economist and I have worked at the University of Malaga where I am a professor of economic theory for 39 years, and when I retired I started the livestock activity and production of Iberian products.
- My objective was to create employment in the Serranía de Ronda, a depressed area of Malaga, and on the other hand to make a product of acorn 100% Iberian acorn of high quality from Malaga.
- And my day depends on whether we are in the montanera season. Montanera is when the acorns fall on which the pigs feed in the last phase of their life, or if we are in a season that is not montanera.
- In the morning one of my workers picks me up and then as we are now in montanera, the first thing we do is to move the pigs of montanera lift them from their beds outdoors in the field and take them to the area where we know there are acorns that have not yet eaten ... (continued)
