Why summer is one of the best times to enjoy Iberian ham
The chambers of Canal Sur reached the Serranía de Ronda to get a closer look at our Iberian High Level. The television program «Eat it.», a kitchen space where the chef Enrique Sanchez proposes every day delicious recipes and quality products, visited our farms in the Genal Valley to discover how our unique method in the rearing of the limited edition Iberian pork.
José Simón guided the program team through the wooded pastures where our pigs are raised in complete freedom. Among holm oaks and centenary chestnut trees, he explained our way of working, that traditional management that respects the territory and animal welfare.
Our 100% Iberian breed pigs live in the wild. They move over rough terrain with slopes of up to 45 degrees, exercising their muscles naturally while searching for food among the vegetation. All of this exercise turns our pigs into true athletes, sculpting some of the fine and exclusive hams and shoulder hams, with a exceptional intramuscular oleic penetration. Thanks to this, the meat achieves an unequaled infiltration and a very high level of quality.

During the visit, José Simón explained the importance of the chestnut pre-harvest. Before the "montanera" with acorns, our 100% Iberian pigs feed on chestnuts from the Genal Valley. This premontanera gives our products that sweet and deep touch so characteristic, a distinctive elegance that we get thanks to this privileged territory.
