When Chelo Gámez arrived in that corner of Serranía de Ronda, inspiration struck and a dream began to take shape in her head. Neither his age, nor his inexperience, nor the vertigo of starting something new, nor the complexity of the company served as a brake. Rather, they were a spur to take the plunge and end up founding Dehesa Monteros, an Iberian ham company intensely linked to the land, to tradition and that goes beyond what anyone could expect from a normal businesswoman and from just another company.

This story, their story, of inspiration, dream, dedication, work, passion and pursuit of excellence, is collected in “El sueño de la Serranía de Ronda”, a work that combines history, territory and passion in a unique format and is destined to leave its mark as a family, business and social legacy. This book gathers the intrahistory of the Simón Gámez family, materialized in a narrative that unites ancestral wisdom and vision of the future, highlighting excellence, perseverance and commitment to the natural and human environment of the highlands.

Multidisciplinary collaboration

«El Sueño de la Serranía de Ronda» is a photographic, poetic and technical book which, based on Chelo's experience and vision, describes the method and the trajectory of Dehesa Monteros and its path to achieve in full Serranía de Ronda acorn-fed 100 % Iberian products with unparalleled characteristics and a quality of the highest level.

The edition is the result of a choral collaboration, which pivots on three axes: narrative, visual poetry and design. The texts have been written by Federico Maciñeira Bertrán de Lis, with photography by José Salto Robles and contributions from renowned experts, such as the prologue by Luis Suárez de Lezo, President of the Royal Academy of Gastronomy of Spain, and an epilogue by the renowned doctoral professor and academic Antonio Argandoña.

The project has also counted with the Editorial Coordination of Chelo Simón Gámez and Mateo García, CEO of Narita Estudio, the good work of Suriana as printer and the writing of a technical-scientific glossary by José Simón Gámez.

A project of craftsmanship and deep symbolism

The book is carefully conceived to be a piece of lasting value that transmits a family legacy: printed in a traditional way, with carefully selected noble and natural materials, handcrafted with centenary techniques linked to the publishing tradition of Serranía de Ronda. Details such as the wire binding, the dry-stamped covers and the exposed spine with Ronda print give this edition a unique and exclusive character, reflecting the deep bond with the territory of Dehesa Monteros.

With the creation of a color palette inspired by the pastureland, a distinctive Ronda graphic pattern and a carefully designed visual architecture, the design of the Narita Studio has endowed the work with coherence and depth, making each element contribute to reinforce the identity and soul of the project. The result is an editorial piece that symbolizes the best of craftsmanship, family excellence and respect for the land, and that highlights the value of Chelo Gámez's dream come true.
