Florido recalled that Dehesa of the Monteros uses chestnuts to feed the purebred Iberian pigs in the premontanera and different types of acorns in the montanera (it buys small-caliber chestnuts from local producers, which helps to provide an outlet for this fruit). To this is added the uniqueness of the area's rugged terrain, which, according to Gámez, gives a special seal to its products. This company, in collaboration with La Algaba de Ronda, is also recovering a breed that was on the verge of extinction: the golden blond pig. It intends to launch hams and Iberian hams of this animal that was formerly common in the region of Ronda.
