Chelo Gámez, the professor of Economics at the UMA who went from theory to practice to create, after her retirement, The Dehesa of the Monteros, now internationally recognized as one of the most prestigious and exclusive ham and Iberian ham brands in the sector, will participate in the International Congress on Women, Gastronomy and the Rural World ‘Féminas’, organized by Vocento Gastronomía. with the purpose of making visible the work, contribution and challenges of women in the hospitality and primary sector.
The second edition of ‘Féminas’ will be held in Asturias from Monday May 16 to Wednesday May 18, and anyone wishing to attend can follow the presentations free of charge through the official website of the congress, https://www.gastrofeminas.com/. Speeches such as that of Najat Kanaache, international face of Moroccan cuisine, who will talk about the ‘New Andalusian cuisine’, or that of Carme Ruscadella, so far the most awarded woman in Spanish cuisine, who will speak with her son, chef Raül Balam, about their upcoming collaboration in the new concept of the restaurant Sant Pau. Sierra Leonean chef Fatmata Binta, winner of The Best Chef Awards 2021, will present her work on the dissemination of fonio, a drought-resistant cereal traditionally used in the Fulani culture, to which she belongs, and which can provide a sustainable alternative to other staple crops. «The concern for sustainability, identity, authenticity, concern for the territory and local products are concepts that are now indisputable in world gastronomy and that women were pioneers in valuing and defending, and ‘Féminas’ tries to give visibility and follow these voices as inspirers of new paths,» explains Benjamín Lana, head of Vocento Gastronomía.
In this sense, Chelo Gámez will talk about the ‘Challenge of internationalization from local production’, in a round table shared with Meritxell Juvé, CEO of Juvé&Camps, and Rosa Vañó, commercial director of Castillo de Canena, which will be moderated by Esperanza Peláez., coordinator of Malaga at the Table.
